We work with uncompromised grain with character. Stone-ground, regenerative organic, and 100% locally grown and milled.
We are not scaling for the sake of scale. We make what the process allows us to make.

Our breads are fermented over 24 hours or more. It’s a slower process, but one that develops structure, depth, and flavor.

We mill flour fresh to preserve its flavor and nutritional value, working with stone-ground grains that retain their character.

Our breads are made with regenerative organic grain grown and milled locally. Our panettone, pizza dough and some focaccia use premium, climatically selected and glyphosate-free Italian grain.

Sourdough isn’t a flavor. It’s a process and a philosophy. We believe natural fermentation is the key to unlocking the nutrition, digestibility and flavor already present in the grain.
The Anatomy of a Harris Hearth loaf
Grain, water, salt and time. When the grain is right, you can taste it in every part of the loaf.

Strength you can see.
A single cut before baking opens into this ridge as the loaf rises in the oven. A pronounced ear means the dough was strong, well fermented and ready. It doesn’t happen by accident.
Dark, golden, chewy and crisp.
We bake it bold. Whole grain and a long fermentation give the crust deep color and a flavor that goes well beyond toasted.
Nothing taken out.
Those specks are bran, the part of the grain most flour leaves behind. We stone-mill the whole kernel, so the bran, germ and endosperm all stay in, and so do the flavor, fiber and nutrients that come with them. That’s a true whole wheat.
Custardy, with structure.
Soft and almost glossy, but it holds its shape. Freshly milled whole grain needs time to fully absorb water. Our dough gets 24+ hours, and the texture shows it.
Balanced, never sharp.
A gentle sourness from natural fermentation alone. Nothing sharp, nothing forced. That flavor comes from time.
100% regenerative organic.
Organic means no synthetic pesticides or fertilizers. Regenerative goes a step further: the farmers rotate crops, plant cover crops and disturb the soil as little as possible, so the land gets healthier each season instead of more depleted. Healthy soil grows grain with character.
100% locally grown.
We know the farm, the farmer and the season it came from. It’s bread with a sense of place.
100% locally milled. Fresh.
Most flour is milled far away and sits on shelves for months, which is why it’s usually stripped of the parts that spoil, along with much of the flavor. Ours is stone-ground Ground Up Grain in Hadley, MA and reaches our dough fresh, while the aroma and nutrients are still there. Our panettone, pizza dough and some focaccia use premium, glyphosate-free Italian grain, the only exception to our local rule.
Organic is about what isn’t used: no synthetic pesticides, herbicides or fertilizers.
Regenerative is about what’s given back: farming that rebuilds the soil through crop rotation, cover crops and minimal tilling.
Together they mean grain that’s grown cleanly, by farms leaving the land better than they found it.
What we make is a reflection of that commitment to keep learning, to keep refining, and to never settle into convenience.
